Favorite Vegan Thanksgiving Recipes from MFS - Michael's Stuffing
This Thanksgiving stuffing recipe from MFS volunteer Michaeal also uses his "Copycat Bell's Seasoning."
Ingredients for Copycat Bell’s seasoning
- 4 1/2 tsp dried rosemary
- 4 tsp dried oregano
- 4 tsp dried sage
- 1 tsp ground dried ginger
- 3 tsp dried marjoram
- 3 tsp dried thyme
- 1 tsp ground black pepper
Directions
- Mix all ingredients together and grind to a fine powder in a coffee or spice grinder. Makes about 1/2 cup of spice mix.
Ingredients for Stuffing
- 2 pounds of russet potatoes boiled
- 4 sticks of celery chopped
- 2 sticks vegan butter
- 2 onions chopped
- 1 quart vegan vegetable broth
- Eight 1-inch-thick slices whole grain bread cubed
- One package Gardein crumbles
- 1 tsp salt
- 1 to 3 tsp of copycat spice blend or to taste.
Directions
- In a large skillet, fry the onions in the vegan butter until they are brown. Add the potatoes and mash until the potatoes are creamy.
- Add the rest of the ingredients and mash until fully combined.
- Taste and adjust for seasoning. Place into a casserole dish and bake for 25 minutes. Serve warm.
