Vegan Flourless Chocolate Chip Cookies
Adapted from a recipe from Food Babe

Servings: Approx. 12 cookies
Ingredients
- 1 cup almond butter
- 1 vegan beaten: combine 1 tbsp of ground flaxseed with 3 tbsp of water. Whisk with a fork and let thicken for a few minutes
- 1/2 cup coconut palm sugar
- 2 teaspoons unsulphured molasses OR maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 ounces "Enjoy Life" vegan chocolate chips
Directions
- Preheat oven to 350°F and line a large baking sheet with parchment paper.
- Mix sugar, molasses, vegan egg, vanilla, baking soda, and salt in a large bowl.
- Add almond butter, and stir well to combine.
- Fold in the chocolate chips.
- Scoop 1 tablespoon size balls onto the parchment lined baking sheet.
- Cook for about 12-15 minutes (longer if you like crispy cookies).
- Place cookies on a cooling rack and cool for 5 minutes
