Laura’s Amazing Pumpkin Pie
Ingredients
- 1 3/4 cups cashews: soak in water for at least 1-2 hours prior to making; you can also soak overnight; drain out water prior to using
- 1 can organic pumpkin pie mix (recommended: Farmer’s Market brand)
- 1 cup organic maple syrup
- 1 pie crust
- Optional: a few dashes of pumpkin pie spice
Directions
- Blend all ingredients until smooth
- Pour into pie crust
- Bake for 60 minutes at 375 degrees
- Let cool in the fridge for three hours
- Top with non-dairy whip cream!
