Vegan Eggnog Sugar Cookies
Ingredients for cookies
- 2/3 cup sugar
- 1 cup vegan margarine, softened
- Egg replacer for the equivalent of 1 egg
- 1/2 tsp salt
- 1/8 tsp nutmeg
- 2 tsp vanilla
- 2 1/4 cups flour
Ingredients for glaze
- 1 cup powdered sugar
- 1/2 cup vegan margarine, softened
- 2 tbsp water
- 1/4 tsp rum extract
Directions
- Combine sugar, margarine, egg replacer, salt, spices, and vanilla with an electric beater on medium until light and fluffy, about 2-3 minutes.
- Add flour and beat on low for another 2-3 minutes.
- Put dough fridge for 30-45 minutes.
- Preheat oven to 350°F.
- Roll out dough and cut into desired shapes.
- Cook for 6-8 minutes.
- Stir together all ingredients for the glaze and pour over cookies.
